Mega Byte Posted July 6, 2021 Posted July 6, 2021 This is a great recipe for those smaller fish that don't provide the big salmon steaks. The recipe calls for Lake Trout, but I used Coho and it turned out great. I was cooking over propane and to get the blackened effect I ended up slipping it under the oven broiler for the last 15 degrees. https://www.realtree.com/timber-2-table-wild-game-recipes/grilled-blackened-honey-lake-trout I used Chef Paul's blacked redfish seasoning.
