GLF Posted March 6, 2007 Posted March 6, 2007 Total Time: 18 minCarbs: Carbohydrate 2gINGREDIENTS• 1 egg white• 3 tablespoons sesame seeds, lightly toasted• 1/2 teaspoon salt• 1/4 teaspoon coarsely ground black pepper• 4 pieces center-cut salmon fillet with skin (4 ounces each)• Lemon slices (optional)DIRECTIONS1. In small bowl, lightly beat egg white with 1 tablespoon water. On waxed paper, mix sesame seeds, salt, and pepper. Dip flesh side of each piece of salmon fillet in egg-white mixture, then dip same side in sesame-seed mixture to coat.2. Heat nonstick 10-inch skillet over medium-high heat until hot. Add salmon fillets, sesame-seed side down, and cook 3 minutes. With pancake turner, turn salmon over and cook 5 to 7 minutes longer, until fish flakes easily when tested with a fork. Serve salmon with lemon slices if you like.
