Smoking Your Wild Turkey Legs In A Propane Smoker:

1- Soke your wild turkey legs in apple juice for 24hrs in the fridge.

2- After 24hrs get your smoker ready by filling up your water pan with apple juice that you soked your turkey legs in.

3- Grease your racks really good and put your wild turkey legs on your racks and put them in your smoker.

4- Set your temp. at 200 deg. and start smoking your turkey legs.

5- Now smoking turkey legs took me about 8 hours till they was done. So what I would do if you do not want them to tuff to eat. Just start checking your turkey legs on the first 3hrs and then after that. Check them out every half an hour to keep an eye on them. How I knew that they was done was. Cutting the meat till there was no more bloody juice flowing.
