steeliebob Posted May 4, 2010 Posted May 4, 2010 I always pick up a couple of game hens at the grocery store and toss them right into the brine with my fish. Then I put them on the smoker with my fish. When they turn a golden brown pull them off. The meat should just flake off from the bird. Serve the bird up with salmon dip and crackers, this is an awesome combo. Make sure that you are first in line because the last in line will get the crumbs.
steeliebob Posted May 7, 2010 Author Posted May 7, 2010 I use 1/2 cup of Kosher salt, 1/2 cup of brown sugar, 2 tablespoons of worchestire, and 1/2 teaspoon of liquid smoke to 2 gallons of water sometimes I add a little garlic salt too. Farily inexpensive and very effective brine.
