I did one for Thanksgiving. It was 32 lbs. Took 11 hours plus at 225 degrees and don't let the water pan go dry. This was the 3rd I have done and they all came out great. The biggest was 43 lbs. They were the birds my daughter was raising for the fair and they went over the weight limit and into the smoker. The most important thing is a good meat thermometer. 180 degrees for turkey and it is done. Good luck and let us know how it turned out.
