salmontime Posted June 30, 2009 Posted June 30, 2009 First cut your salmon fillets into chunks about the size of a big hamburger. Second, season the top of the fillets with Garlic Pepper. Next, take a pound of bacon (I like Hickory Smoked bacon the best) and cut the bacon slices into thirds and cover the seasoned side with bacon and place it bacon down on a grill basket. Then season the top on fillets with garlic pepper. Cover the top with bacon, close the grill baske and grill on a low heat. Depending on how thick the fillets are, it may take 20 to 30 minutes of grilling, but be sure to cook on a low heat where flamming up is not too bad. If the grill is too hot, the flames will burn the bacon before the salmon is cooked. Once the the bacon is a golden brown, your fish will be done. It should look something like this. Serve on a toasted bun or bread with lettuce, tomato, and mayo. Sometimes I skip the veggies and I'll lay morels or onions on top of the bacon and grill it all together. Hope you guys enjoy!
