silver one Posted June 8, 2009 Posted June 8, 2009 Last night Took out a nice Chinook fillet with skin on and made a foil boat out of tin foil. Skin down. Melted 2Tbl spoons of butter in a dish. then added 1Tbl spoon of minced garlic. then added 3Tbl of olive oil in the dish then mixed it all up. Next I took a basting brush and brushed the mixture all over the fish. after that I seasoned the fillet with old bay seasoning. Next I add sliced red onion over the fillet. then thinly sliced tomato. then Green Pepper. and then yellow and green zucinie sqaush also sliced thin. next I season the veggies with a little salt and pepper and then placed on the Grill over Charcoal. After about 20 to 25 min the fillet is done. Just before I pull it back off the grill. I took 2 cups of shredded Jalapino Chedder cheese and spread it over the fillet untill cheese melted then served. My son who does not like fish ate it and liked it. acutually asked for seconds. This was a great dish. My friend came up with the salmon pizza name and has done it other ways. the key is how you season it. Like Emeral says yo have to give each layer a little love.
