Don't be afraid to add some pineapple juice/chunks to the marinade and on top of the fish while cooking. This is a great recipe, and Lowry's makes a couple great marinades that are similar (Sesame Ginger, and Teriyaki) if you don't have time or desire to make your own. I serve the fish over white rice and french or garlic bread goes well...grilled veggies/fruits are another great side!
