In small bowl, lightly beat egg white with 1 tablespoon water. On waxed paper, mix sesame seeds, salt, and pepper. Dip flesh side of each piece of salmon fillet in egg-white mixture, then dip same side in sesame-seed mixture to coat. 2. Heat nonstick 10-inch skillet over medium-high heat until hot. Add salmon fillets, sesame-seed side down, and cook 3 minutes. With pancake turner, turn salmon over and cook 5 to 7 minutes longer, until fish flakes easily when tested with a fork. Serve salmon with lemon slices if you like.
